Their colour can range from a deep purple-red to an orange-white. Their colouring is almost a colour chart indicating the depth that they were harvested from, the whiter they are the deeper they live. But regardless of colour or depth, when prepared properly its flesh is firm, rich and slightly sweet and known worldwide as the best.
