Encased in a stunning pearlescent shell the Akoya is a described a flavour reminiscent of clams, with the brininess and minerality of an oyster, and an underlying sweetness of a scallop and can be prepared in a multitude of different creative ways.
A well established and much-loved oyster, our investment in rock oyster farming technology combined with our rigorous and passionate people has developed our Albany Rock Oyster into a much sought after oyster for Australia’s best chefs and discerning diners. The taste is described as creamy and soft, and rich with a briny finish, and the unique vegetation surrounding the Albany water ways adds a unique floral complexity to the already-bold umami flavours of the oyster, which presents a taste experience reflecting the pristine Southern Ocean waters.
